"Nasi goreng" is Indonesian fried rice, a flavorful dish made by stir-frying pre-cooked rice with ingredients like eggs, meat, vegetables, and seasonings. It's commonly garnished with green onions and fried shallots, and often served with accompaniments like fried eggs or pickles
Ingredients:
- Chicken thighs and legs, boiled, and shred the chicken
- 2 eggs, beaten
- 150g shrimp, peeled and chopped
- 5 beef meatballs, thinly sliced
- 5 fish balls, cut in half
- 500g white rice (preferably leftover cold rice)
- 2 tablespoons sweet soy sauce
- 1 teaspoon sea salt
- 1 stalk green onion, thinly sliced
- 1 1/2 tablespoons fried shallots for garnish
- 3 tablespoons sesame oil for sautéing
Spice Paste:
- 1 teaspoon shrimp paste (terasi)
- Roast 3 large red chili peppers
- 3 curly red chili peppers
- 2 cloves garlic
- 6 shallots
- 1/2 teaspoon coarse ground black pepper
How to cook:
Heat sesame oil in a pan. Sauté the ground spices until fragrant, then set aside on the side of the pan.
Add beaten eggs to the pan. Stir until they form grains. Add shredded chicken, chopped shrimp, and sliced meatballs. Stir well until all the ingredients are mixed.
Add white rice to the pan. Stir well and make sure the rice is thoroughly mixed.
Add sweet soy sauce, sea salt, monosodium glutamate (MSG), salt, and pepper to taste. Continue stirring until all the seasonings are absorbed, and the rice is cooked.
Add sliced green onions. Stir again until all the ingredients are perfectly mixed.
Serve the fried rice on a serving plate, complete with sunny-side-up eggs on top and a sprinkle of fried onions.
